These pastas have a slightly nutty flavour and their nutritional qualities exceed those of hard wheat pastas. Moreover, some of our recipes are based on the einkorn (triticum monococcum) of Haute Provence, of which the millennium implantation has a PGI (protected geographical indication) label. An important quality which is famous and protected.
